Quinoa Lime Ginger Salad With Grilled Shrimp

Specialty Dressings/Vinaigrettes Entrée Salad/Pasta Salad,Seafood Shellfish
  • 1 cup Cooked quinoa
  • 1 cup Mixed field greens
  • 1 cup Kale
  • 2 tbsp Scallions white and light green parts, sliced thin
  • 2 tbsp Cucumber halved, seeded and thinly sliced
  • 1 tbsp Chopped cilantro
  • 6 Cherry tomato halves
  • 5 Grilled shrimp
  • 2 cups Ken's Lime Vinaigrette
  • 1 tbsp Fresh ginger chopped
  • 1/2 tsp Ground ginger
  • 1 pinch Cayenne
  • Grill shrimp.
  • Place quinoa, greens, scallions, cucumber, cilantro and tomatoes in bowl.
  • Add dressing and toss.
  • Plate and top with grilled shrimp.
  • Garnish with cilantro leaves.
