Lime-marinated Mahimahi Fillet

Fruit/Citrus Entrées Seafood Fish
  • 1/2 cup Ken's Lime Vinaigrette
  • 1 Mahimahi fillet about 8 ounces
  • 1/2 cup Roasted pineapple Diced
  • 1 tbsp Red bell pepper Diced
  • 1 tsp Cilantro Minced
  • 1 tsp Jalapeño Finely diced
  • 1 tbsp Red onion Finely diced
  • 1 tbsp Ken's Lime Vinaigrette
  • Lime twist for garnish
  • Basmati rice prepared
  • 1.  Preheat grill.
  • 2.  For the pineapple salsa: Mix pineapple, red bell pepper, red onion, jalapeno and cilantro together. Add Ken’s Lime Vinaigrette and toss.
  • 3.  Place the mahimahi fillet in the marinade and turn to coat. Allow to marinate at least 15 minutes.
  • 4.  Cook fillet on the preheated grill until the fish flakes easily with a fork and is lightly browned, 3 to 4 minutes per side.
  • 5.  Serve with rice and pineapple salsa. Garnish with the lime twist.
