Fall Harvest Salad

Fruit/Citrus Entrée,Appetizer Salad/Pasta Salad Vegetables
  • 3 cups Baby kale
  • 3 cups Romaine, cut ½ inch
  • 2 cups Butternut, roasted, small diced
  • 1 cup Roasted apples, sliced
  • 1 cup Cucumber, ½ inch diced
  • 1 cup Pomegranate avrils
  • 6 oz Lemon maple vinaigrette
  • 2 tbsp Pumpkin seeds, toasted
  • For Lemon Maple Vinaigrette:
  • 8 oz Ken's Lemon Vinaigrette
  • 2 oz Maple Syrup
  • 1.  Place kale, romaine, butternut, apples, cucumber and pomegranates in mixing bowl.
  • 2.  For Lemon Maple Vinaigrette place 8 oz. Ken's Lemon Vinaigrette and 2 oz. Maple syrup in a bowl and mix.
  • 3.  Add Lemon Maple Vinaigrette dressing to salad and toss.
  • 4.  Place onto serving plate and top with toasted pumpkin seeds.
