  • 3 fl-oz Ken's Creamy White Balsamic Vinaigrette
  • 4 cups Baby Arugula Greens, Lightly Packed
  • 1/4 Granny Smith Apple, Sliced
  • 1/4 Braeburn Apple, Sliced
  • 1/4 Red Beets, Roasted, Peeled, Sliced
  • 3 each Cranberry Almond Goat Cheese Fritters See recipe below
  • 4 oz Chicken, Grilled
  • 2 tbsp Toasted Barley
  • Cranberry Almond Goat Cheese Fritters
  • 11 oz Goat Cheese
  • 1/4 cup Cranberries, Dried, Chopped
  • 4 each Eggs, Whole, Beaten
  • 1 cup Flour, AP
  • 2 cups Almonds, Finely Chopped
  • Toasted Barley
  • 1 cup Barley, Rinsed
  • 2 1/2 cups Water
  • 1/4 tsp Salt, Kosher
Mix all ingredients well.
