Sherry Blue Cheese Vinaigrette with Chives

Bleu Cheese
  • 1 1/2 c Ken's Chunky Blue Cheese Dressing 865
  • 3/4 c Sherry Vinegar
  • 1/2 tbsp Dijon Mustard
  • 1 tsp Garlic, Chopped
  • 3 tsp Sugar, Granulated
  • 3/4 c Oil
  • 1/4 c Dried Chives
  • 1/2 c Onion, Minced
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper, Table Grind
Using a mixing bowl, blender or food processor combine the vinegar, Dijon, garlic, sugar, and onion.
Mix well and slowly add the oil until emulsified.
Add the blue cheese dressing and mix quickly for a very short period of time not to break the large chunks of blue cheese into small pieces.
Season with salt and pepper and add the chives.
